Pasta From Scratch! Fresh pasta is like a blank canvas. You are only limited by your imagination, but first you have to have the canvas. Learn how to make the dough, beautiful sheets of pasta, as well as Gnocchi and Ravioli! Once you learn how the texture of the dough looks and feels like, you will be able to whip up your own fresh pasta at home.There is not a full meal created in this class, but get creative with your sauces and toppings once you cook the delicious product off, and you'll have a hearty lunch or dinner in no time!- No pasta machine? No Problem! Our instructors show you how to roll the Italian pasta by hand!
Ingredients for NO kit registrations: Italian Pasta, Gnocchi, Basic Ricotta Ravioli
Italian Pasta Dough:
yield: 4 servings
2 cups AP flour
3 pinches salt
1 Tbsp Olive Oil
1 egg
water as needed
Gnocchi:
Yield: 3-4 servings
1 # mashed potatoes (feel free to use mashed potatoes already seasoned with butter and cream here, but we start with plain)
1 egg
1/2 # AP flour
salt and pepper to taste
Ravioli Filling and extras:
1 cup ricotta cheese (feel free to use any filling similar in texture such as roasted mashed butternut squash)
1 cup semolina for dusting your finished pasta
2 cups AP for dusting flour when making your pasta
Suggested Equipment
- 2 Medium sized Bowls
- pot of water to cook potatoes for gnocchi
- pot of water to cook off finished gnocchi
- slotted spoon
- potato masher or fork
- 1-2 sheet trays
- Bench Scraper
- 2 Forks
- Small container to break your eggs in to
- Pasta machine or Rolling Pin, Knife, and Cutting Board
- dusting flour
- plastic wrap
- small container to mix and season your ravioli filling
- wooden spoon weighed down with a couple heavy books hanging off the edge of your counter-to hang noodles
- semolina flour for dusting (comes with kit)
- *optional pizza cutter
- salt and pepper
