Our NEW series of Digital classes now allow you to keep learning with us from the comfort of your own home at your own pace! Classes are pre-recorded, so no need to worry about delay or missing out on vital information. Registrations for MEAL KIT classes close 72 hours prior to class for ordering purposes. NO KIT registrations open until 1:30pm PST on day of class.


Ramen!! Toss the 'Top Ramen' and learn to make the super flavorful pork stock, turning it into Ramen Broth, favorite fixings like roasted pork shoulder, pork belly, fish cakes etc to of course the noodles from scratch. No cutting corners, no rushed additives...the REAL DEAL!   


You will receive an email on the 'day of class' with the video(s) and recipe packet with ingredient list and equipment we suggest for whether you have purchased a meal kit for pick-up at the shop on the day of class from 2-6pm or decide to shop on your own.


Please note, substitutions or allergy requests are not included in the meal kit option (please make appropriate subs at home) Thank you for understanding!


Ingredients needed if NO kit option is purchased:


Stock 6-8 servings : 2 pounds pork bones (knuckle bones and a pigs foot works well), 2 carrots, 2 stalks of celery, 1 large onion


Broth 2 servings: 4 handful sized kombu (dried seaweed), 1/4 cup bonito flakes, 2 inches fresh ginger, 3-4 cloves garlic, 4 dried shittake mushroom


Garnishes and Fixings 2 servings: 1/4 pound pork belly, 1/4 pound pork shoulder, 2-4 fish cakes and or fish balls, 2 stalks green onion, 1 small canned bamboo shoots, 2 eggs, 3 inch piece diakon radish, (optional: 1/4 cup canned corn, 1 piece nori, Togorashi seasoning, hot chili oil)


Noodles 2 servings: 2 cups all purpose flour, 1 cup water, 1 Tbsp baking soda, 2 tsp salt


Equipment suggestions:


Stock: Large stock pot (the biggest pot you have), mesh strainer, large bowl to strain out the bones/veg, containers to freeze extra stock (we like zip-lock bags)


Ramen broth: medium sized sauce pot, spatula or large spoon, slotted spoon or strainer, if you have a pasta machine, great!  No worries if not, we will also show you how to roll out and cut the noodle dough without the machine! Rolling pin in place of pasta machine.
