DIGITAL COOKING CLASS: Spring Pie oh My!

Our NEW series of Digital classes now allow you to keep learning with us from the comfort of your own home at your own pace! Classes are pre-recorded, so no need to worry about delay, or missing out on vital information. Registrations for MEAL KIT classes close 72 hours prior to class for ordering purposes. NO KIT registrations open until 1:30pm PST on day of class.


Spring Edition! Tired of tough crust and soggy fillings? You will learn to make fabulous crusts from scratch from the classic to the unique. From fruit pies to cream pies and beyond! You'll be ready to whip up those fabulous pies again for any upcoming event, share with your neighbors, or just as a delicious dessert all to yourself!


You will receive an email on the 'day of class' with the video(s) and recipe packet with ingredient list and equipment we suggest for whether you have purchased a meal kit for pick-up at the shop on the day of class from 2-6pm or decide to shop on your own.


Please note, substitutions or allergy requests are not included in the meal kit option (please make appropriate subs at home) Thank you for understanding!


Ingredients needed if NO kit option is purchased, one of each pie: Dough, Strawberry Rhubarb, Chocolate Cream Pie


Mealy Pie Dough


12    oz    pastry flour


1/4   tsp   salt


6      oz    cold butter 


1      ea     egg


1      oz    ice water


Strawberry Rhubarb, 16 oz fresh strawberries, 20 oz fresh rhubarb, 4 oz water, 1.5 oz cornstarch, 12 oz sugar, ¼ tsp salt, 2 tsp lemon juice


Chocolate Cream Pie, 2 oz bittersweet chocolate, 16 oz milk, 2 tsp vanilla, 2 oz sugar, 16 oz milk, 1.25 oz cornstarch, oz sugar, ea egg yolks, ea eggs, oz butter, 1 cup heavy cream, 1/4 cup powdered sugar, 1 tsp vanilla


Equipment suggestion:


2-3 medium/large bowls, cheese grater, flexible bench scraper (if you have, you could use a sanitized credit card for making sure your dough isn't stuck to the table if you don't have one), fork, tasting spoons!, 1 small extra container for cracking eggs and egg wash, pastry brush, Knife, Cutting Board, parchment or silpat lined sheet tray, 2 pie tins/pans, 1 medium heavy sauce pot, spatula , plastic wrap, whisk, dusting flour


*optional :microplane, second small sauce pot
